Clary Sage honey is uncommon because it depends on a strong, well-timed bloom and the bees concentrating their forage on that floral source. Our supply from this harvest is small, and once this batch is gone, another release will depend on a future Clary Sage harvest.

Another special characteristic of Clary Sage honey is how slowly it tends to crystallize. Its naturally higher fructose-to-glucose balance helps it stay liquid longer than many other floral honeys, making it especially appealing for customers who prefer a smooth, pourable raw honey.
